Making vegetables into dessert: Sometimes, I’m a genius (+recipe)

This is actually GOOD for you

The idea that sweet potatoes are a superfood makes me mwah ha ha ha and tent my fingers, Mr. Burns-style. It’s like getting away with something. Unlike fellow superfood kale, sweet potatoes actually taste good and don’t make me want to vomit. Vegetables, man. What can’t they do?

Because they just aren’t awesome enough by themselves, my roommate came up with the recipe below. It turns the potatoes into a sweet and spicy bonanza of flavor—and vitamins.

Amazeballs Sweet Potatoes

Threeish sweet potatoes

½ cup dark chocolate balsamic vinegar

½ cup olive oil

1 tsp cayenne pepper

1 tsp salt

1.      Preheat the oven to 450.

2.      Scrub the potatoes and cut them into cubes or steak fries, depending on how lazy you’re feeling.

3.      Microwave those bad boys for 4-5 minutes or until they’re a little bit softer.

4.      Put aluminum foil over a cookie sheet.

5.      Put the potatoes on the cookie sheet, evenly spaced out so that each cube/fry is resting on the foil.

6.      In a small bowl, mix the remaining ingredients together. The cayenne pepper is more of a “to taste” thing, depending on how spicy you like things.

7.      Use a brush thingy to brush the mixture onto the exposed sides of the taters. You might have to mix up more sauce stuff. Sorry!

8.      Bake for 15 minutes, then use a spatula to turn the potatoes over.

9.      Now might be a good time to put some more sauce on. Taters get dry.

10.   Check on them again after 15 more minutes. They’re probably not done.

11.   After 15 more minutes, they might be done. If you like your carbs extra crispy, probably you have another 10-15 more minutes.
